These simple whole wheat banana muffins are made with 100% white whole wheat flour and are a great source of whole grains and fiber. These muffins make a quick breakfast on the go or a perfect treat for a packed lunch. My kids gobble them up and my husband and I enjoy them with our morning coffee. 

These muffins are quick and simple to make and they freeze well. I usually make them on Sunday mornings and have them on hand for our busy week ahead. Talk about a great grab-and-go breakfast or an afternoon pick me up!  They are also a great addition to my kids’ school lunches. 

What makes these easy whole wheat banana muffins healthy and delicious?

Well, there is a secret ingredient in these muffins. White whole wheat flour. Yes, it’s a real type of whole grain. Wheat has different variations and white whole wheat is a true whole grain. It is milled from hard white spring wheat. This white whole wheat flour is lighter in color and texture and has the exact same nutritional value as the whole-wheat flour we are all used to. Using white whole wheat flour gives your baked goods a lighter and fluffier texture. It also allows you to use 100 percent whole wheat in recipes that may only call for 50% whole wheat and 50% all-purpose flour.

You will notice that many recipes call for a mixture of your standard whole wheat flour and all-purpose flour. That’s because regular whole wheat flour can be heavy and tends to make baked goods very dense and thick. But not with the white whole wheat, you will get that texture and all the health benefits in this magic ingredient.

What is in these easy whole wheat banana muffins?

These wholesome muffins are made with healthy ingredients that your family will love and that you probably already have on hand in your healthy pantry. 

  • White Whole White Flour, King Arthur Brand 
  • Unbleached Sugar 
  • Eggs 
  • Raw Coconut Oil 
  • Plain yogurt or sour cream
  • Ripe bananas – I always have frozen bananas too. 
  • Chocolate Chips (optional) 
  • Banking soda 
  • Cinnamon 
  • Pure vanilla extract 

How to make these easy whole wheat banana muffins 

So let’s get started. 

Pre heat your oven to 350 degrees.

In a large mixing bowl sift together the flour, baking soda, cinnamon, and salt. Set aside. 

With a hand a stand mixer beat your sugar and eggs with a whisk attachment until light and fluffy, about 10 minutes.  Slowly drizzle in the oil while continuing to mix. Add mashed bananas, yogurt, and vanilla. 

Next, carefully fold in dry ingredients and mix on low speed until combined. Turn off the mixer and add chocolate chips at the point if you like. Stir in by hand with a spatula.

Pour into lined, or oiled muffin tins filling only halfway up each muffin cup. Bake for about 20-25 min until golden brown.

*Pro-tip, I like to add my mixture to a glass measuring cup with a spout to pour. This makes it way easier to fill the muffin cups.

Ingredients

  • 1 2/3 cups white whole flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1 cup unbleached sugar

  • 1/2 cup coconut oil or light colored oil

  • 2 Eggs

  • 3-4 ripe bananas – mashed

  • 2 tablespoons plain yogurt or sour cream

  • 1 teaspoon vanilla extract

  • 2/3 cup chocolate chips

Directions

Notes

  • For this recipe, if you do not have white whole wheat flour on hand, just use a mixture of 50/50 regular whole wheat and all-purpose flour.
